Beef on the bone slowcooker stew recipe
This warming meal can also be made in a large casserole dish with a lid

Ingredients
Serves 4
800g beef on the bone or oxtail
2tbsp plain flour to coat
2tbsp groundnut oil
1 beef stockpot or a beef stock cube dissolved in 500ml boiling water
300g shallots, peeled and trimmed
300g carrots
500g small new potatoes
Salt and pepper seasoning
Method
Toss the beef pieces in flour seasoned with salt and black pepper.
Over a medium heat in a large frying pan, heat the oil and fry the coated beef until it is brown all over.
Lay the browned meat in the base of the slow cooker. Cover with the shallots, carrots, potatoes, beef stock and seasoning.
Cook on the slowcooker’s “high” setting for 4-6 hours.
Tips: I use Chantenay carrots that can go into the slow cooker whole. If you do not have a slow cooker, increase the stock volume by 50 per cent and use a large casserole dish with a lid, and cook on gas mark 4 for about 1 hour and 45 minutes.
