Ahi Poké
900g of fresh Sashimi Grade tuna
1 sweet onion (thinly sliced)
1 small bunch of spring onions
½ a tsp of ginger juice or grated fresh ginger
½ a cup of soy sauce
1tsp of mixed sesame seeds
1tsp of toasted sesame oil
1tsp of kosher sea salt
1 cucumber, finely chopped
2 avocados, pureed
100g (per bowl) sushi rice
½ a tsp of finely diced red chilli (optional – if you like it spicy)
Mix the onions, ginger, soy sauce, oil, sesame seeds, sea salt and chilli (if using) in a large bowl, to create the classic Ahi sauce. Cut the tuna into half-inch pieces, and add to the bowl with the Ahi sauce. Mix well and leave to marinate in the fridge for about 20-30 minutes so that the tuna can absorb all the flavours.
Boil 100g of sushi rice per bowl, and sprinkle the cooked rice with a few drops of sushi vinegar. Place in a bowl, and top with the Ahi tuna mixture. Sprinkle the finely chopped cucumber with salt, wait five minutes and then squeeze in kitchen paper to remove water. Use to garnish each bowl, along with two teaspoons of the pureed avocado, and serve.
