THE UK'S leading chefs' organisation has dropped its French name in favour of an English one after declaring that British cooking has come of age. The Academie Culinaire de France, founded in 1980 by Albert Roux and Michel Bourdin, boasts the nation's top chefs among its 240 members. It is now the Academy of Culinary Arts.
